And in fact even on the Windows side, in early January 2020 I remember that Intel released a buggy Intel Graphics driver that broke 5120x1440 support, even though it worked fine before.

I agree those are often frustrating issues, since it's never clear whose "fault" the interop issue is, and meanwhile the customer is stuck in the middle. That's a limitation strictly limited to macOS itself, because daisy chains work fine even on Mac systems while they're running I would expect that if you can establish that the display works as expected when you're running Boot Camp, then Apple would have much less "justification" foisting this problem report onto Dell, but I suppose it's still possible that there's some bizarre interoperability problem between the specific combination of this display and macOS, even if the display obviously works in Windows and there may be other 5120x1440 displays that work fine on macOS. That's been found by Mac users who have been disappointed that they can't use daisy chaining. I would bet that if you were to install Boot Camp onto your Mac, it would work at native resolution when running Windows. Each of the connection methods you've tested allows the system to push enough video bandwidth to run 5120x1440 at 60 Hz, so that's not introducing a bottleneck that's limiting your resolution options. I'm not sure why this display would be limited to 3840x1080 on macOS, and I wasn't aware of that note in the documentation, but if it's there, then it sounds like a macOS-specific limitation of some kind. Retina assets would look huge on that display even if it were running at its native resolution because they'd be designed for displays with a far higher pixel density. But a U4919DW is essentially just a pair of 27" QHD displays fused together, and a 27" QHD display has pixel density of about 108 ppi, which is decidedly on the "normal" end of that spectrum, so you would want "standard" resolutions". That causes macOS to use its art assets, which are meant for Retina displays that have ~200-220 ppi pixel densities rather than the typical 100-110.
